Tom Sellers

Hailing from Nottingham, Tom Sellers is a two-Michelin-starred Chef who opened his first restaurant, Restaurant Story, at the age of 26. Tom learned his craft from some of the world's most influential Chefs and spent time working alongside the likes of Tom Aikens in London, Thomas Keller in New York, and Rene Redzepi in Copenhagen.

He became known for his ability to break convention and merge fine dining with forward thinking. A natural storyteller, Tom demonstrates the pleasure of pure, simple cooking, with nostalgia-stirring dishes that evoke memories and celebrate seasons.

Tom Anglesea

Durham-born Tom Anglesea is Dovetale's Executive Chef bringing with him an abundance of experience and knowledge from some of the leading dining destinations in the UK and Internationally. Tom has built his reputation working under revered industry names such as: Gordon Ramsay (at Boxwood Cafe, Maze and Restaurant Gordon Ramsay), Thomas Keller (Per Se), Neil Perry (Rockpool and Spice Temple), Rene Redzepi (Noma) and Nuno Mendes as Sous Chef (Chiltern Firehouse). His breadth of skills led him to the coveted role of Head Chef at The Laughing Heart - a late-night natural wine bar serving creative contemporary London cooking. Tom works alongside two Michelin Star Chef Tom Sellers at Dovetale whilst also leading the food programme across the whole 1 Hotel Mayfair property.

Oliver Espersen

Assistant Food and Beverage Director

Originally from Denmark, Oliver boasts a strong background in beverage and wine management in a multitude of Michelin Star establishments and high-end luxury hospitality brands. Espersen cut his teeth in the hospitality industry early in his career working as a front-of-house intern at Noma. Following a move to the UK, he spent time in Manchester and London taking part in a management graduate programme with D&D before being appointed as a Sommelier at Restaurant Story, the exemplary two Michelin Starred restaurant from Tom Sellers in Bermondsey. His return to London sees him take up the role of Director of Wine at Dovetale, led by Tom Sellers and then move into an Asst. F&B Director position. With sustainability and quality at the forefront, his wine programme is due to feature traditional bottles and new world wines.

Tara Ozols

Wine Director

Born and raised in the US, Tara Ozols’ educational journey has taken her to prestigious wine academies and institutes, where she immersed herself in the study of viticulture, oenology, and sensory analysis. Since moving to the UK from New York ten years ago, Tara’s professional journey has taken her from Marcus, the two Michelin Star restaurant in Belgravia; to Wine Buyer at organic supermarket Whole Foods and to her most recent role as Wine Director and Head of Beverage of one Michelin Star restaurant, SOLA. Over the years, Tara has received many accolades for her professional accomplishments, with her most recent awards including the Michelin Sommelier Award 2023 and being announced as the new face of Veuve Clicquot’s La Grande Dame 2015. Tara’s dedication to her craft has led her to Dovetale, where she has been with the team since the restaurant’s opening in July 2023, and is leading the  to curate one of London’s most extensive wine programmes.

Matthew O'Connor

Head Maître D'

With over fifteen years of experience in the hospitality industry, Matt’s career started with humble beginnings at a local restaurant, before moving to Raymond Blanc’s Brasserie Blanc and later in the opening team for Dinner by Heston, where he held a pivotal role, spending his last two years honing his skills as Mâitre d’. Following this, Matt has worked with Danny Meyer in New York, Tom Kerridge in London and most recently he was welcoming the London glitterati to Bacchanalia. Now, as Head Mâitre d’ at Dovetale, Matt continues to lead the team and offer impeccable service and hospitality, helping the restaurant stand out in London’s fine dining scene.
